Fried lotus root with beef
Materials: 3 taels of beef, half a catty of lotus root tip, 1 egg white, 1 piece of ginger, 2 cloves of garlic, 2 each of green and red peppers. The crispy lotus root tip is paired with the tender beef, so you can eat one more bowl of rice with it.
Methods
1. Cut the beef into thin slices, add egg whites and a small amount of oil to marinate for 10 minutes. Cut the lotus root tip into small sections, shred the ginger, slice the garlic, and chop the chili and set aside for later use.
2. Heat the pan with cold oil, add ginger and garlic to a small fire to stir up the aroma, add the beef to high heat and fry until it is cooked and served.
3. Put the oil in the pan again, add the chili and lotus root tip and stir-fry until it becomes raw, add the beef and stir-fry evenly, then add an appropriate amount of salt to season the pan.

Stir-Fried Garlic Stalks with Beef Baiye
Materials: green peppers, ginger and garlic, beef shutters, light soy sauce, dark soy sauce, sesame oil
Methods
1. Boil the beef blinds in cold water and drain.
2. Heat oil in a pan, add ginger and garlic until fragrant, add green pepper and stir fry to make bubbles.
3. Add beef tripe, add a little dark soy sauce to mix, a little salt and light soy sauce to taste.
4. Sprinkle sesame oil out of the pot and add some coriander or something.

Red stewed meatballs
Materials: 200 grams of minced meat, half a piece of old tofu, 1 green pepper, 1 tomato, appropriate amount of green onion, ginger, garlic, appropriate amount of white pepper, 1 egg white, 1 teaspoon of chopped pepper, 2 spoons of light soy sauce, old Smoke 2 spoons, 2 grams of salt
How to:
1. Add 2 grams of salt to the meat filling, appropriate amount of green onion, ginger and garlic, 2 tablespoons of light soy sauce, 1 egg white, a little white pepper, and mix thoroughly.
2. Put the tofu into the fresh-keeping bag and crush it. Pour into the prepared meat filling and mix well.
3. Put an appropriate amount of oil in the pot. When the oil temperature is 60% to 70% hot, knead the meatballs and fry them until golden brown.
4. Chop the tomatoes, don't cut them, because cutting will cause the tomato juice to be lost. Cut the green pepper into pieces. Chop the pepper and set aside.
5. Put oil in the pot, add chopped peppers and fry until fragrant, then add tomatoes, fry out the soup, and try to use a spatula to chop the tomatoes as much as possible while frying.
6. Stir-fry tomatoes into sauce, add dark soy sauce and tofu balls, stir-fry well, then add green pepper, stir-fry well, collect juice over high heat, and remove.

Dongpo Tofu
Materials: 300g tofu, 200g bamboo shoots, 150g shiitake mushrooms, appropriate amount of oil, 2g salt, 3g shredded green onion, 3g shredded ginger, 1 star anise, 10g sweet noodle sauce, 5g sugar, 10g light soy sauce, 50g rice wine
Methods
1. Cut tofu into diamond-shaped pieces; sliced shiitake mushrooms; sliced bamboo shoots.
2. Put the tofu into the pot and fry until golden on both sides.
3. Put oil in the pot, add shredded green onion, shredded ginger, and star anise to fry until fragrant, then add shiitake mushrooms and bamboo shoots.
4. Add tofu and cook rice wine.
5. Add sweet noodle sauce, salt, sugar and light soy sauce.
6. Pour the clear soup and simmer for 5 minutes.
7. It can be out of the pot until the soup thickens.
